Hello there! I'm so happy you've come to visit Too Neat for Wheat's website and hopefully you'll come to visit the restaurant sometime! And I'm also thrilled that you would like to know a bit more about me, too!
To get started, I will tell you a bit about my experience with Celiac disease. In my family, we are not exactly sure who the original carrier of the disease was, but both my cousin and I have celiac disease. My cousin has known about her Celiac disease her whole life, while I have just recently found out about my allergy in August 2015. It sounds a little crazy that I didn't know about my allergy until recently, but my symptoms were mainly stomach aches after I ate, which I thought was totally normal. I can say this for sure now, stomach pains after eating is definitely not normal at all. Celiac disease is a tough concept because everyone is affected by it differently, which is the reason many people don't know they are allergic to gluten until it is too late.
To drift over to a slightly new subject, living with Celiac disease can be pretty hard, too. The food you have to eat takes a lot longer to cook, no more easy snacking. You pretty much get you best meal at home only because some restaurants barely have anything gluten free. Additionally, the issue of contamination is a really serious one, contamination can happen with items that say "gluten-free" beacuse they are not produced in a dedicated gluten-free facility. Basically, contamination is the worst part of any allergy and if you have Celiac disease, it can mean you're going to be stuck at home all day in pain for many reasons. All of these reasons are exactly why I wanted to make Too Neat for Wheat.
Too Neat for Wheat is essentially a safe-house for Celiac disease sufferers like myself. No gluten will ever come into our facility and all of our products are certifiably gluten-free; you can count on it. Our restaurant is open to all whether it be people with Celiac disease, the "fad" dieters, and people that just want to see what a gluten- free meal tastes like.
